Banana Bread

Perfect as a healthy snack or breakfast on the go!

INGREDIENTS

* 3 very ripe bananas, mashed

* 2 eggs, at room temperature (very important to be at room temp)

* 1/3 cup pure maple syrup (do not use honey)

* 1/2 cup Greek yogurt 0% fat

* 1 teaspoon vanilla extract

* 1 3/4 cup wholewheat flour

* 1 teaspoon baking soda

* ½ teaspoon cinnamon

* ¼ teaspoon salt

* 1/3 cup coconut oil (melted)

METHOD

1. Preheat oven to 350 degrees F. Line a bread loaf pan with parchment paper and grease the inside of the pan to prevent sticking.

2. In a large bowl, add in all wet ingredients and mix up everything well. Next add in the dry ingredients and mix well until it’s all combined. Do not over-mix!

3. Add the banana bread batter into your pan, split a banana in half and add this to the top if you like! Bake for 50 minutes.
