Crispy Tandoori Chicken Wings

INGREDIENTS:

11⁄2 lbs. (680g) chicken wings

Marinade:

3⁄4 cup (215g) Greek yogurt 11⁄2 tbsp. fresh lemon juice 1⁄2 tbsp. fresh ginger, minced 1⁄2 tbsp. garlic, minced

1⁄2 tbsp. allspice
3⁄4 tsp. cayenne pepper
3⁄4 tsp. smoked paprika
1 tbsp. cumin powder
1⁄2 tbsp. ground coriander 3⁄4 tsp. salt
pinch of black pepper
1 tbsp. coconut oil, melted

Mixed salad:

1 gem lettuce
1/4 cucumber
1/2 cup baby tomatoes 1/2 red onion

METHOD:

Place all the ingredients for the marinade into a large bowl and mix together until well combined. Add the chicken wings and stir until completely coated in the marinade. Cover the bowl and place into the refrigerator for at least 2 hours.

Preheat the oven to 400°F (200°C). Line a baking sheet with baking paper.

Take the wings out of the marinade and place onto the baking sheet. Bake in the oven for 45-50 minutes until golden and crispy. Serve immediately.

Serve with a side of mixed salad.
